Wise Wolf Cabernet Sauvignon 2023 – Pays d’Oc, France

I’ve just come back from my company wine conferences and managed to taste a bottle of this French wine, which was unusual for me, as I am usually inundated by New World varieties. I have to say, I’m pleased I got to add this to my cellar! There’s something quietly confident about Wise Wolf’s 2023 Cabernet Sauvignon. From the sun-drenched vineyards of Pays d’Oc in southern France, this wine doesn’t shout but rather speaks with poise.

First Impressions
In the glass, it’s a deep garnet with a subtle violet rim. The nose is inviting: blackcurrant and plum lead, followed by hints of dried herbs, cedar, and a whisper of vanilla from gentle oak ageing.

On the Palate
Medium-bodied and smooth, it balances ripe fruit with earthy undertones. Cassis and blackberry dominate, but there’s a savoury edge—think black olive and tobacco leaf—that adds complexity. Tannins are present but polished, making it approachable now, though it could age gracefully for a few years.

Pairing Potential
This is a versatile red. It would sit happily alongside grilled lamb chops, mushroom risotto, or even a smoky aubergine dish. It’s also a solid solo sipper for a quiet evening in.
